PhD scholarship nutritional enhancement of microbial foods - BRIGHT
Are you excited by the idea of using microbial engineering to build foods with better nutritional profiles from the inside out? Eager to work at the interface of nutrition science, genetics, and fermentation in a cutting-edge, interdisciplinary research environment? Curious about how the design choices we make now will shape a new global food category? Then join us as our new PhD Student in Molecular Nutrition and Strain Engineering!
This position is a part of BRIGHT's mission- oriented Microbial Food research programme (“referred to as Mission 2”), which aims to build an AI-powered framework for the rational design of microbial foods that meet four targets: consumer acceptance, health, sustainability and scalability. The first phase focuses on two fungal chassis, Aspergillus and Yarrowia, characterizing more than 500 prototypes through multi-omics, sensory analysis, life-cycle assessment and safety testing. Predictive models for flavor, texture, nutrition and process scale-up are trained iteratively through active learning. The scientific scope spans strain engineering, adaptive laboratory evolution, solid- and liquid-state fermentation, sensory and consumer research, and pre-clinical and clinical evaluation of safety, bioavailability and cardiometabolic health, in collaboration with national and international partners.
You will work with computational biologist, microbial engineers and food scientists to use targeted strain engineering to improve the rate-limiting nutritional features of Aspergillus and Yarrowia food prototypes, including protein bioavailability, essential amino acids, and selected accessory vitamins.
The job As our PhD Student in Molecular Nutrition and Strain Engineering, you will:
— Identify the rate-limiting nutritional features of the two chassis using data from the wider characterization workstream, and design strain engineering strategies to address them — Engineer Aspergillus and/or Yarrowia strains to improve specific nutritional features (essential amino acids, vitamins, protein digestibility) without compromising taste, texture, or process performance — Coordinate with the protein chemistry and in vitro digestion workstream to iterate on strain designs based on measured outcomes — Contribute to the training of predictive models linking strain and process design to nutritional outcomes
What we’re looking for You will have a two-year Master’s degree (120 ECTS points) in molecular biology, biotechnology, microbiology, nutrition science, or a closely related area, or a similar degree with an academic level equivalent to a two-year Master's degree.
You will have excellent organizational and project management skills and enjoy developing new methods.
You will be fluent in spoken and written English and have literacy in common IT systems and AI.
The ideal candidate will also:
— have experience with molecular biology techniques and, ideally, some exposure to genetic engineering of filamentous fungi or yeast — have a genuine interest in nutrition science and the biochemical basis of food quality — be able to work both independently and as part of a large collaborative team — be comfortable in an interdisciplinary environment where nutrition science meets microbial engineering — be patient, curious, thoughtful, and playful — key qualities for exploratory work at the intersection of disciplines
Approval and Enrolment The scholarship for the PhD degree is subject to academic approval, and the candidate will be enrolled in one of the general degree programmes at DTU.
